Snowmen Cake Pops

While I am sitting here enjoying the sunshine and seasonal warmth that floats through my apartment window here in Australia, I feel bad for those of you on the other side of the hemisphere now embracing a cold, snowy winter. I thought I would do something to cheer you up and make you feel like winter has heaps of good parts about it too, so I bring to life: Snowmen Cake Pops!

Perfect for a winter wonderland party, a Christmas event or even just a white themed celebration, these Snowmen Cake Pops are absolutely delicious and quite straightforward to make. However, I did use a packet mix from the company In The Mix for the majority of the cake and frosting, so I hope I don’t loose all of your respect for it! You can purchase your own box online at Brand Castle for yourself, which is a pretty cool website! There are certainly some awesome cake pops out there!

Ingredients:

In The Mix Cake Batter and Frosting Mix

1 Egg White

4 Tablespoons Butter

1/4 Cup Water

1/2 Cup Icing Sugar

1/2 Teaspoon Milk

White Chocolate Buttons

Method:

1. Preheat the over to 180 degrees Celsius and line a baking pan with baking paper.

2. Combine the cupcake mix with 2 Tablespoons room temperature butter, water and egg white. Mix until fully combined and distribute batter into cake pan.

3. Put the cake pan into oven for 12 – 15 minutes until a knife inserted in the centre comes out clean. Then transfer to fridge to cool completely.

4. While the cake is cooling, use an electric mixer and beat 2 Tablespoons of room temprature butter until light and fluffy.

5. Add the frosting mix and the icing sugar to the butter mix and beat until combined. Add in the milk and stir again.

DIY Cake Pops

6. Pull the cooled cake out of the fridge and crumble into the frosting mix, mixing as you go. Make a soft dough that can easily be shaped into balls and roll the dough into the cake pop shapes. Line them on a baking tray lined with baking paper and put the tray in the freezer so that they firm up.

7. While the cake pops and firming up in the freezer, melt the white chocolate buttons in the microwave until they create a smooth texture. Pull the cake pops out of the freezer, stick a cake pop stick in the cake (if it is hard to put them in you can dip it in melted chocolate first to make it easier) and then coat in the chocolate.

8. Work fast to coat the cake pop in white chocolate and gently tap each cake pop against the side of the bowl to smooth out the coating. If you need to, feel free to melt the white chocolate again to coat the cake pop if it is taking too long.

9. Place a snowman hat (included in the mix, but you can make your own out of cardboard if you would like!) on the top of the cake pop and place the cake pop in a stand (also provided, but you are more than welcome to make your own as well!). Let the chocolate harden and dry.

10. Next, once the chocolate has hardened, use a black icing pen to draw the snowman’s face on. Make it as funny or creative as possible and have a blast with it! In the end, you will have a decadent dessert that is both delicious and fun for the whole family to enjoy!
